Crispy granola with nuts and fruits
Today I'm introducing you to a pretty simple but also super delicious granola recipe.
Granola is essentially nothing more than a crunchy muesli. Oven-roasting gives it its typical crunchy texture, allowing some of its flavors to truly shine.
Every time I'm looking for muesli, I'm struck by the amount of added sugar that most ready-made mueslis contain. Since none of these products have completely convinced me so far, I thought I could simply create my own muesli—completely tailored to my personal taste, as a crunchy muesli.
This is how this granola recipe was born, which, of course, can be adapted or expanded as desired. You can throw together your favorite ingredients as you please, creating a unique creation every time. The great thing about it is that you always know exactly what's in it. Furthermore, it's probably one of the easiest recipes you can imagine.
In this granola recipe, I've blended various nuts, berries, and seeds with cinnamon. It gets its crunchy texture from the added coconut oil. This crunchy muesli enhances any smoothie bowl, yogurt, or dessert, adding a special crunch. The blend of sweet fruits and nutty flavors creates a truly unique taste you won't be able to get enough of.
Ingredients
I deliberately refrain from giving exact quantities, as I think it makes the most sense to measure according to your own taste – then it certainly tastes best
oatmeal
Pecans
Hazelnuts
Chia and/or flax seeds
pumpkin seeds
Salt
Cinnamon
Coconut oil
Honey/agave syrup
Goji berries, mulberries and/or cranberries
Coconut flakes
Tools: oven, baking tray, baking paper, sharp knife, cutting board

GRANOLA MIX BEFORE BAKING

- Preheat the oven to 180 degrees Celsius. Place the baking paper on the baking sheet and sprinkle the oats on the paper. The oats will form the base of our granola, so make sure the entire paper is covered.
- Chop the pecans and hazelnuts into small pieces and then sprinkle them onto the baking sheet along with the flaxseeds and pumpkin seeds. Although I'm not the biggest hazelnut fan myself, I consider them an important ingredient here, as they release a very distinctive aroma during baking. The pumpkin seeds add a pleasant flavor.
- Sprinkle a pinch or two of salt and then cinnamon over the baking sheet.
- Combine the ingredients, add the agave syrup (or honey) and coconut oil, and mix well a second time. It's best to mix this mixture with your hands, especially if the coconut oil is still solid.
- Then bake the granola mixture on the middle shelf for about 10-15 minutes, until your home not only smells wonderful but the mixture also turns a light brown. However, since the granola can burn quickly if left in the oven too long, it's best to check on your granola every now and then.
- Finally, let the baking sheet cool and then add the desiccated coconut, mulberries, goji berries, and cranberries to the granola. It's important not to bake these ingredients, as they would burn in no time.
- Add the granola to your yogurt or smoothie and enjoy. Or simply snack on it on its own!
